190gall-purpose flour- about 1 1/2 cups
2tbspcaster sugar
4tspbaking powder
apinch ofsalt
1largeegg
300mlmilk- 1 1/4 cup
55gunsalted butter- melted, about 1/4 cup
1tspvanilla extract
Instructions
In a bowl, sift the flour, sugar, baking powder and salt. Keep aside.
In a small bowl, whisk the egg. Add milk, melted butter and vanilla extract and mix until combined.
In your dry ingredients bowl, make a well in the centre and slowly pour your liquid mixture. Mix them together gently until no lumps remain.
Heat a small frying pan (preferably non-stick or cast iron with a flat surface). Rub a little butter on the pan and using a ladle, spoon over about 1/2 cup of batter onto the pan. Cook it for 2-3 minutes on each side on medium heat. You'll know when to turn the pancake when you start seeing bubbles all around the surface of the pancake and the edges seem to be cooked. The pancakes should be golden brown on each side.
Serve the pancakes stacked upon each other with honey or maple syrup. Top them up with some fruits or fruit compote or some whipped cream.
